My mother laughs at me everytime I call her now for clarification on cooking, because I did’t pay attention to her in the kitchen growing up. The real problem though, is that she doesn’t use exact measurements, so when she tells me “a little this” and “some of that”, what turns out in my kitchen doesn’t taste as good as hers. It’s my punishment, I guess. =)
I’ve tried a lot of youtube Jamaican recipes, and many of them flop in comparison to those of the matriarchs in my family back home. I haven’t even tried one of your recipes yet, but I dare say I KNOW I’m going to love what I try, because as you hit on the nail in one of your videos: you really spend time seasoning/marinating the food first.
Being a frugal mom, I gave up on the “experimenting”… felt like a waste of money when things didn’t turn out right. But did you hear me say how happy I was to find your site?! It’s like the Caribbean version of America’s Test Kitchen!
I’ve spent the last couple days mostly on your site, drooling over the gold I’ve found in your recipes. I can’t wait to order the book and the seasonings… I’ve started clearing out the freezer to make room for the suet!

I found you on youtube with your recipes . I have been searching for ultimate african dishes and really there isn’t very man people or chefs that are doing African recipes. So maybe as an idea because I love the way you represent your cooking skills you should do a special for all african meals! My husband is from Kenya and I have been learning the way his culture cooks the food is Outstanding! So just giving an idea out for a chef to do East African dishes I would love to see you do it!
