Deep Fried Jerk Turkey

 

 

 

***Keith Lorren's Injectable Jerk Paste***

*1 bottle Keith Lorren's Jerk Seasoning
*1 bunch of scallions
*6 garlic cloves
*2 scotch bonnet peppers
*juice of 1 lime
*juice of 1 large orange
*1/2 cup soy sauce
*1/4 cup water
1 teaspoon Chinese 5 spice

*****Citrus Jerk Sauce****

Juice of 1 lemon
1/2 cup orange juice
1 teaspoon corn starch
1/2 cup reserved jerk paste
2 sticks butter
1 teaspoon whole all spice
1 sprig of thyme
Fresh cracked black pepper
Keith Lorren's All Purpose seasoning
to taste
pinch of sugar

Directions:

*Puree Jerk Paste ingredients in a blender

*Reserve 1/2 cup of
jerk paste for the
Citrus Jerk
Sauce

*Strain remaining jerk paste to collect solids through mesh strainer or cheese cloth.

*Reserve liquids for injecting

*Rub jerk solids inside and out of turkey

*Inject strained jerk liquid into all parts of the turkey. wrap in a plastic bag and store in the refrigerator for up to 3 days.

*Deep fry at 350 degrees for 3 minutes per pound. remove turkey from oil and allow to rest for 10-15 minutes before carving

 

To make citrus sauce,

mix 1 teaspoon of corn starch into fruit juices. add to pan and bring to a boil to thicken. add jerk paste and remaining ingredients and remove from heat. stir until mixed. Adjust for taste.
